What makes our spirits so good?

We make spirits people actually want to drink. It sounds simple, but it matters.

  • 100% distilled on site

  • Copper stills designed and hand built onsite by our Head Honcho Hilton

  • Botanicals foraged from our property in the Perth Hills

  • Small-batch. No shortcuts.

We don’t outsource production and we definitely don’t rush the process.

You see, every step of our sprit-making process is done right here, amongst the trees on our beautiful little patch of the Perth Hills.

We’re passionate (nay, slightly obsessed) with crafting bloody good booze - that we love to drink ourselves and also share with those who appreciate a good tipple.

Tried and tested makes perfect

A huge amount of effort, thought and trial & error has gone into our recipes and our distilling processes. And we’re pretty proud of the result. We forage and hand-pick the signature botanicals for our gins (like Wax Lyrical and Miss Myrtle) and have started coopering whisky barrels using traditional tools. Proper rustic!

Our stills are beautiful copper beasts that look like they came out of the Darwinism era. And if you head to our cellar door (highly recommended) you’ll get to see these babies in action.

Meet the Maker…

This is Hilton, the mastermind behind HHH… also known as an experimenter, an inventor, a creator… a self professed ‘mad professor’. Hilton won’t admit it, but he’s a bit of an overachiever with an interesting backstory.

From his career in civil engineering that led him to work with remote communities in South Africa, to working on EPC gas processing projects in the Middle East and even as a Litigation Case Co-ordinator for an arbitration case… he now finds himself tucked away amongst the trees of the Perth hills making boutique spirits.

It’s Hilton’s outside of the box approach and stubborn ‘I’ll find a way’ attitude that has led to some pretty damn good booze that we all get to enjoy (thank you very much) but also industry leading stills that are such an engineering feat that even he stops and thinks ‘how did I even do this?’. Limited Edition

WA Single Malt Whisky Batch #2

After the success of Batch #1 which won ‘Spirit of the Year’ from the West Australian Good Food Guide, Batch #2 has been released.

Only 180 bottles were made for Batch #2 and they’re selling fast. Each batch will have its own unique character developed by the barrels and climate (just like a great red wine), while the process behind the whisky remains constant.

This batch is different; caramel, butter, popcorn on the nose, like a dessert. Tasting notes are caramel and vanilla, followed by dried apricots and nutmeg with a subtle burnt oak finish.
