We’re not ordinary and neither is our gin and whisky.
…Hilton’s approach to life is the same as his approach to making spirits - If someone tells him ‘this is how you do something’, he’ll stubbornly find a way to do it better. He likes a challenge and loves a problem to solve - and he doesn’t like rules… unless he makes them.
Not limited by boundaries or ‘how things have always been done’, Hilton began the HHH story by utilising his background in civil engineering to design & construct a copper still so he could create a truly special & unique gin. In fact, he’s the man behind the stills of about 80 distilleries here in Australia with 3 in NZ and one in USA. There aren’t many distilleries in Australia that use copper stills… and we’re the only one that makes them!
When it came to the recipes, Hilton spent many an hour experimenting, refining and tweaking until he knew he’d come up with something good (like, really good). In addition to the usual suspects that go into making gin like juniper, Hilton foraged unique signature botanicals grown here at the distillery to add a unique twist to our gin. And we reckon he nailed it.
Next came the whisky. With Scottish ancestors of course Hilton was destined to make a single malt. It’s in the blood. So using traditional methods, he milled, mashed and fermented malted barley, distilled it twice then barrelled it for 2 years. Oh but it doesn’t end there… Hilton of course had to go another step further and build his own barrels didn’t he? And in true Hilton style, crafting everything by hand from the copper sheet, the old oak staves, to the whisky in the bottle - a truly unique achievement for one pair of hands.
So when we say hand crafted every step of the way, we bloody mean it!
