HHH Spirits’ Single Malt named West Australian Good Food Guide ‘Spirit of The Year’!
Hilton always wanted to make a single malt whisky… and 2024 was the year he finally got
around to bottling his first batch… and when this guy is determined to do something… he never
does it by halves… he generally doesn’t just do it 100% either, he’ll always find a way to take it
next level.
Hilton also loves to do everything by hand, being involved every step of the way (when you’re a
one-man-band…well…). He not only uses stills he has designed and built himself, but he has
also hand crafted one of the barrels his whisky is currently aging in. A lot of sweat, blood and
tears… literally, and a lot of expletives went into making his first batch… and it paid off.
Not only did Hilton’s first attempt at single malt whisky win ‘Outstanding New Product’ at this
year’s Kalamunda Chamber of Commerce awards, but it was also named ‘Spirit of the Year’ by
the WA Good Food Guide. The WAGFG judges said “when judging, it’s always a thrill to see if
anything triggers that part of the brain asking, “have I tasted this before?” But this one was a
first - Batch 1, no less! To craft something this remarkable on the initial attempt speaks volumes
about the distiller’s skill. And there’s an extra layer here: this distiller not only uses the still but
builds them as well.”
The judges described the whisky as “delivering everything you’d hope for in a single malt—rich,
aromatic, and with an oily viscosity that coats the palate and brings it to life”. They said that in a
competition filled with exceptional entries, Hilton’s whisky stood out as the best they’d tasted.

With Batch #1 causing quite a stir in the whisky community, people have been keen to get their
hands on a bottle. Being a limited release there was only a small number of bottles available
with only a very small number left. Hilton is offering tastings at the HHH distillery where bottles
can be purchased in person, but he’s also released a few online which can be purchased on our
