What makes our spirits so good?
Well… obviously they taste amazing (if we do say so ourselves, although if you don’t believe us come and try them for yourself - we’re pretty confident you’ll love them, and have a good time as well)...
… AAAnyway, where were we, oh yes - we were going on about how awesome our booze was…
You see, every step of our sprit making process is done right here, amongst the trees on our beautiful little patch of the Perth Hills… We’re passionate (nay slightly obsessed) with making gin & whisky - that we love to drink ourselves and also share with those who appreciate a good tipple (yes, you). A huge amount of effort, thought and trial & error has gone into our recipes and our distilling processes. And we’re pretty proud of the result. We even forage and hand pick the signature botanicals for our gin off our land and have started coopering whisky barrels using traditional tools. Proper rustic!
AND… and this is a big ‘AND’ (that’s why we put it in capitals) … One important feature that is unique to HHH is that our gin stills are designed and made on-site by our head distiller, Hilton (you can read more about this crazy dude here and why he’s known as a bit of a legend in the industry). Our stills are beautiful copper beasts that look like they came out of the darwinism era. And if you head to our cellar door (highly recommended) you’ll get to see these babies in action.

Meet the Maker…
This is Hilton, the mastermind behind HHH… often referred to as an experimenter, an inventor, a creator… a self professed ‘mad professor’. Hilton won’t admit it, but he’s a bit of an overachiever with an interesting backstory.
From his career in civil engineering that led him to work with remote communities in South Africa, to working on EPC gas processing projects in the Middle East and even as a Litigation Case Co-ordinator for an arbitration case… he now finds himself tucked away amongst the trees of the Perth hills making gin and whisky.
It’s Hilton’s outside of the box approach and stubborn ‘I’ll find a way’ attitude that has led to some pretty damn good whisky and gins we all get to enjoy (thank you very much) but also industry leading stills that are such an engineering feat that even he stops and thinks ‘how did I even do this?’. He’s an interesting dude with an interesting sense of humour (a distillery visit is highly recommended to see him in action) but if you’d like to know more click below to read on…

Limited Edition
WA Single Malt Whisky
Hilton always wanted to make a single malt whisky, and he’s finally got around to making one. And of course, in true Hilton style, he nailed his first batch. Batch #1 is already multi award winning taking out the Outstanding New Product award at the 2024 Kalamunda Chamber of Commerce Outstanding Business Awards and was also named ‘Spirit of the Year’ by the West Australian Good Food Guide.
Only 137 bottles were made for Batch #1 and they’re selling fast. Second batch will be ready early 2025. Each batch will have its own unique character developed by the barrels and climate (just like a great red wine), while the process behind the whisky remains constant.
